How do i take off the engine cover, and get to the air filter box to switch the stock paper filters to K&N air filters? Is there anything else that needs to be removed to get to them?

Sorry this is not answered. However, talking to someone at Mercedes, K+N filters are 'oiled' and thus some oil enters engine intake which can damage the expensive measurement sensors on the intake.

So, just remember that before you go with non paper filter ..
