It can only be done with Star or an alternative plugged in.

A good independant (rather than MB) should have a machine. BUT please ensure that there is no safetly related damage anywhere, and have any sensors in the area of impact checked.

If you replaced the airbag controller with a new one you will need to visit a MB dealer or an indendant with a genuine supported Star machine as it needs doing by someone with Star Diagnosis that can do SCN coding properly (which requires username/password on MB system)

The airbag controller is "once only" coding, i.e if replacing a new part is needed and it needs coding with a genuine Star Diagnosis machine that can genuinely do SCN coding.

I'm reasonably sure that the airbag controller will keep a log of the deployment for ever (and if you put a new one in, the MB central database will know that you have SCN coded it) - so just be aware that there may be implications for insurance if you were to have a nasty sometime and the insurance company not to know about this accident.
